Lactobacilli preserves the brew and continues to eat the residual sugars in the bottle until eventually the brew tastes more and more vinegary - around 7 months for Red Dog. You may see a live culture in your bottle - this is in fact a sign that your soda is a number 5 - alive and "biotic". Eat, swallow, spit-out or leave it in the bottle to be discarded. Store your kombucha at around 4°C to keep it dormant and it tastes better too :) Due to fermentation, kombucha does contain some residual alcohol but never more than 1.15% (like ginger beer) making it "non-alcoholic".
